5. Frying: frying is an important link in the production line of French fries. The oil temperature should be controlled between 170-200 ℃. The materials must pass through the frying machine within 3 min. the oil is mostly palm oil. Compared with other edible oils, it has good stability and long service life, which is especially suitable for frying oil.
